Stopped in for a quick lunch at Mad Taco today. For those of y’all that have been out of town, Mad Taco is the newest culinary creation by local Chef Peter Madden of Madden’s, the casually elegant and seriously delicious restaurant in Downtown Bryan.
Mad Taco is convenient to both Bryan and College Station, behind the Bank of America building at Texas and University. The service and atmosphere were WOW, as expected. So I’ll get right into the tacos I sampled, one with the world’s best tortilla, the other with no tortilla at all.
The Chile Rubbed Salmon Taco featured seared salmon with cheese, avocado, marinated red onion, chile oil and cilantro aioli. It was all wrapped up in one of the best tortillas I had ever tasted. About the thickness of a Gordita shell, warm, soft, slightly sweet, heavenly!
The Grilled Tuna Taco had no tortilla at all! The rare tuna was served in lettuce shell with shredded carrot, zucchini, cabbage and cilantro tossed with pickled ginger dressing, and red chile and cilantro aiolis. The person working the counter informed me of the lettuce shell and offered me the option of a regular shell. I trusted Chef Madden’s judgement on the composition of the atco and ordered it as intended. Glad I did! It held together perfectly and the lettuce shell was not just healthy, it allowed the flavor of the red chile and cilantro aiolis th really dominate the taco sans competition a delish tortilla.
